Warwick Chef School (WCS) has been operating in Johannesburg, South Africa, since 1992, and offers a six-month, full-time, intensive chef training course, aimed at students wanting to make a career as a chef in the hospitality industry.

The school believes in preparing students for the pressured reality of this industry, in making them aware of the demands of this way of life. We have therefore created a training environment which resembles a hotel restaurant/kitchen, where practical training is given on an intensive basis. The school’s facilities include a temperature-controlled pastry section, a large practical training kitchen and an auditorium-style lecture room with library. Practical work experience is gained in their 40-seater restaurant and 100-seater function facility.

This focus on practice rather than theory is reflected in the way that our students’ work is assessed. There is an end-of-course written examination, but it only receives 25% of the overall mark. The remaining marks are all awarded for on-going practical work during the course.

WCS accepts twenty-four students for each course, but classes are limited to twelve. We have four full-time and seven part-time lecturers maintaining a high standard of personalized chef training. There is a long waiting-list for our courses. Acceptances are done a year in advance. As soon as students are accepted, they each receive a list of places to live in the city, from which they can choose.

WCS provides all the cooking ingredients for the duration of the course, plus all the notes. The students’ uniforms are washed on a daily basis and returned to them at the end of each day. We also have the highest possible expectations regarding both the cleanliness of the working environment and the personal cleanliness of our students.

WCS is a member of the International Association of Culinary Professionals. We also have strong network of contacts with hotels and restaurants in New York, Las Vegas and Los Angeles, where many of our ex-students have worked. At present, we have no overseas students, but in 2013 we are planning to open a second school, this time in Cape Town, where we intend to widen our intake to include students of different nationalities.

Lorraine Dixon, who has been our Principal since its opening, is famous both for her teaching and for her passionate love of food. She is recognized in the industry as one of the top educators in the country. She has a degree in Education and a Master’s degree in Food and Beverage Technology.
